Sample Caribbean Recipes

1) Recipe for Drunken Cranberry sauce(Thanksgiving w/ a twist):

Ingredients:

  1. 1 large unpeeled orange, seeds removed, cut into quarters
  2. 4 cups fresh whole cranberries
  3. 2 tbs TORTUGA HELL FIRE HOT SAUCE
  4. 1-2/3 cups sugar
  5. 1/4 cup of dark rum

Preparation Steps:

  1. Combine half the cranberries & half the oranges in a food processor bowl and grind into coarse paste.
  2. Pour into a large bowl and repeat.
  3. Combine the fruit mixture with the pepper sauce, sugar and rum and stir well.
  4. Cover and refrigerate for 24hrs. or longer.

2) Try Jerk Burgers on the BBQ this weekend!. recipe:

Jerk is a hot, spicy, uniquely West Indian seasoning which has been developed over the centuries. Used for grilling, barbecuing, marinating or blending small amounts into sauces, soups or stews to give your meals a Caribbean kick

Ingredients:

  1. For sensitive palates, use only 1-1/2 teaspoons of JERK marinade
  2. 1-1/2 lbs of ground chuck or round
  3. 2 tablespoons of soy sauce
  4. 2 tablespoons of your favorite rum
  5. 1/4 cup finely diced red onion
  6. 2 tablespoons ground black pepper
  7. 1 tbs salt.

Preparation Steps:

  1. Combine all the ingredients in a bowl, and blend with a fork.
  2. Divide meat and shape into patties.
  3. Chill 6 hours or longer. Then light up the BBQ and grill until they reach desired degree of doneness.
