Ingredients

5-7 bananas
3 sticks butter
1 large container of whipped topping
1 bottle of red maraschino cherries
half-cup of crushed pecans
2 cups crushed graham crackers
1 medium can crushed pineapple in its own juice
2 cups powdered sugar
2 eggs

Directions

•    Beat eggs, 2 sticks of butter, and powered sugar for 15 minutes. Set aside.
•    Mix 1 stick butter and graham cracker crumbs. Pat into 13- x 9-inch pan.
•    Spread first mixture over crust, and then cover with sliced bananas.
•    Spread well-drained pineapple over the bananas and cover with whipped topping.
•    Sprinkle pecans over top, placing a cherry in each section of about the size you plan to serve.
•    Refrigerate several hours and serve.

Chocolate Éclair Cake
(No baking required; easy as 1, 2, 3, 4)

1.    Butter a 13- x 9-inch dish, and then line it with whole graham crackers.

2.    Mix one 6-ounce package of instant French vanilla pudding with 3 cups of whole milk and blend for 2 minutes.

3.    Fold in one 9-ounce container of whipped topping. Pour a good layer of the mixture over the crackers, then add another layer of crackers, then more pudding mixture.

4.    Top with graham crackers. Frost with fudge icing made as follows:

•    Combine ¾ cup of sugar and ¼ cup of honey, 1/8 teaspoon of salt, 1/3 cup cocoa, ¼ cup of milk.
•    Bring to a boil and cook for 1 minute.
•    Remove from heat.
•    Add ¼ cup butter and 1 teaspoon of vanilla flavoring.
•    Cool, then beat until it’s smooth and thick enough to spread over the top of the crackers.
•    Refrigerate for 24 hours, then serve.

Icebox Fruit Cake
(No baking required)

Ingredients

1 box graham crackers, crushed
1 stick melted butter
1 can evaporated milk
1 bag coconut
1 cup sugar(alternatively, minus 1 tablespoon, then add 1 tablespoon of honey)
2 cans sweetened condensed milk
1 bag of small marshmallows
1 cup of chopped walnuts or pecans
Candied cherries, if desired

Directions
Melt marshmallows and mix all ingredients in a large pan.
Pour into individual containers for storage in refrigerator at least 24 hours before serving.

Ritz Cracker Pie
(Light baking required; but quick stir-up)

Beat whites of 3 eggs till they are stiff.
Beat in 1 cup of sugar
Fold in 1 teaspoon vanilla flavoring, 1 cup chopped pecans, and 25 crushed Ritz crackers.
Pour into greased pie pan and bake at 350 degrees for 20-25 minutes.

Chill then cover. Serve when your guests are ready.

From Scratch Chocolate Pudding
(Minimal baking required)

Ingredients
2 cups of sugar
2 large or 3 small eggs
4 tablespoons cocoa
4 tablespoons cornstarch
a tad of vanilla flavoring

Directions

Mix sugar, cocoa, and cornstarch until smooth. Add milk and beaten egg yolks.  Cook in skillet (preferably cast iron) until thick. Add vanilla. Pour into baking dish and top with beaten egg whites and put in 350-degree oven till egg whites turn lightly brown.

Alternatively, add pecans or coconut. Substitute 3 tablespoons corn meal for the cocoa. Pour in a greased pie plate and bake for a crustless pie.

We at I-ShopTheWorld.com haven’t tested these recipes, but Judy and her family highly endorse them. We encourage you do use them as the basis of some creative cooking. We see opportunity to add other flavorings and spices, substitute honey for some of the recommended granulated sugar, and in general just have some fun.

It’s perfect for those who are rushed, on a tight budget, or just plain tired of the same old things everywhere you go during the holidays.

But wait! You don’t have to reserve this nifty creative cooking idea only for the holidays. It will work any night, any time, even for no special occasion.

Latoola reports that she and her husband can eat an entire batch of the Hot dog Dinner Dip as a standalone meal on a hungry night when he has skipped dinner, so gauge how much you might need by that and multiply accordingly. Making two batches certainly wouldn’t double your efforts.

The point is: Have Fun with Food. What a hot dog of an idea!

Latoola’s annual Thanksgiving dinner must include apple, pumpkin, and pecan pies. Her husband insists on it even though she protests that only the apple pie typically gets eaten, and she tosses the bulk of the pumpkin and pecan pies into the trash after giving him a week to refuse any more desserts.

This year, Latoola got inspired …

a week after Thanksgiving in her quest to avoid wasteful tossing of food into the trash bound for a landfill instead of for someone’s palate. So, she created caakies–a combination of an individual cake and a cookie–made from the leftover pies.

Beware: this is not an exact recipe. It’s a cooking style that relies on sound instincts on the cook’s part. Here’s what Latoola did, but says you can modify at will and still get good results:

Since her pumpkin pie was made from canned pumpkin pretty much following the recipe on the label but substituting sweetened condensed milk instead of canned evaporated milk and baked in a graham cracker crust, she just dumped the three-fourths of the pie she had left into a mixing bowl and started stirring.

Then, she scraped the remaining two-thirds of the store-bought pecan pie from its too-thick crust and mixed that real good. Next step was to mix about a half cup of all-purpose flour with about a half cup of light brown sugar, then blend that into the pie mixture, after which she added about a quarter cup of honey, three-quarters cup of chocolate chips, about a half cup of coconut, and about a cup full of mixed dried fruit that included raisins, pineapples, cherries, and cranberries.

She dropped the mixture in “dollops” on a buttered clay baking dish and baked for about 12 minutes at 350 degrees, watching carefully for the edges and tops of the randomly shaped caakies to turn light brown.

She cooled them slightly on a wire rack and test-tasted to her delight. She reports the warm caakies were superb, but she was even more delighted when her husband arrived home and devoured three of them in their cooled version.

A hit!

Latoola says the same creative cooking technique could be applied to a leftover sweet potato pie with any variety of interesting ingredients including oatmeal, granola, and your favorite varieties of nuts (got some leftover from a holiday party you aren’t sure what to do with?).  Or, spice it up a bit with fresh natural nutmeg seed.

As they come out of the oven, personalize them even more using that excess holiday candy. Press a chocolate kiss, a bite-size peanut butter cup, or a piece of candy corn into them. For simplicity, you might even just sprinkle on a little white powdered sugar. If you are feeling super creative, mix up a batch of frosting (or cheat by using the store-bought kind) and slap two caakies together.

Latoola says she’s likely going to make pumpkin and pecan pies for Christmas and might even hide them after a couple of slices have been removed so she can make caakies for New Year’s with very little planning, shopping, and effort.

Bet you could serve it with ice cream, but be sure you also offer your guests a fresh brewed cup of Thai coffee or tea or Tortuga gourmet coffee.

Answers included traveling to be with family, staying in town to attend an annual gathering of friends who live away from their families, and one ambitious one who announced she and her family would be meeting at their mountain cabin where she would cook the traditional Thanksgiving meal – all from scratch, including her apple and pumpkin pies.

The group quickly pronounced that ambitious one as insane even though she defended her fresh approach using organic and natural products, like honey in her pies and candied yams, as one of the greatest days of her year.

Finally, time came for the one who originally asked the question to answer the question. I’ve dubbed her the grandmother because she said her two children, their spouses, and five grandchildren were coming for Thanksgiving Day and she was planning to spend as much with them as possible.

Another lady asked the grandmother how she could spend any time with them while preparing a meal for that many people, and the answer really caught my ears, “You wanna hear a little secret?”

All heads nodded, so she continued, “I buy a really good brand of frozen apple pie, then let thaw for about a half-hour. Then I carefully slip it into my own pie dish, brush it with milk and sprinkle on a little sugar to give it that nice glazed top, then I bake as directed. Voila! In no time I have a pie people always rave about with very little effort.”

“Wow, that would also work with pumpkin pie,” one of the ladies planning to attend the friend get-together piped in. “That’s what I’ve been asked to bring this year and I was going to buy the pie at the bakery, but I think I’ll try ‘baking my own.’”

They all laughed heartily, then the conversation continued with a suggestion that you could buy an entire turkey dinner at the supermarket and serve it beautifully on china platters and bowls and never have to admit to not having done all the work.

They discussed the virtues of instant mashed potatoes and how adding a few spices and some extra butter enhances the flavor. They mentioned gravy mixes for a lump free topping on those potatoes. Brown and serve rolls from the supermarket, and frozen vs canned string beans for a casserole.

The general theme of this group was to minimize how much time they spent in the kitchen and maximize how much time they spent with family and friends.

1. 1 whole chicken, halved

1. Rub chicken with lime and salt.

We at I-ShopTheWorld.com are what you might call “party people,” so we have some party idea suggestions that will add variety and spice up your party: host a saucy chili cook-off.

Compile your guest list so you can create teams of 3-6 cooks. On your invitation let your guests know they’ll be participating in a chili cook-off and who’ll be on their team (have some extra fun and mix up couples). Ask them to bring any special ingredients they like to use in their chili, but let them know that every thing they could possibly will likely be provided and everyone will be starting with a basic batch of chili you will prepare in advance. Then they can spice it up. Be sure to arrange for enough pots and utensils for each team to have their own. Tell them to BYOA (bring your own apron).

Here’s how it works: The day before your party prepare a big batch of chili starter sauce using your choice of basic ingredients. Here’s one recipe. We suggest you multiply the ingredients to accommodate the number of teams you’ve organized with a hefty batch of starter sauce.

Basic chili sauce recipe to serve 6
•    1 pound lean ground beef or steak chopped into bite-size pieces
•    1/2 cup chopped onion
•    2 chopped garlic cloves
•    1 can (14.5 ounces) diced tomatoes or tomato puree
•    1/2 teaspoon chili powder
•    1 teaspoon salt (regular or garlic)
Preparation:
Spray the skillet with nonstick cooking spray or a light coating of an oil, such as olive oil. Brown the ground beef or chopped steak with the onion. Add the remaining ingredients stirring as you go. Note, you are not adding beans at this point; your guest cooks get to do that. Cover and simmer for at least 20 minutes. Refrigerate till party time.

On the day of the party, scoop up an equal amount of the basic chili sauce for each team, then invite them to complete the cook-off by adding any of the following ingredients you’ll have available in whatever quantities they prefer:

•    cooked, browned ground pork
•    pre-cooked sausage
•    cans of beans, including kidney, chili, black, cannelloni, and pinto
•    cans of vegetarian refried beans with chilies
•    cans of tomato sauce or whole tomatoes with and without chilies
•    cans of whole kernel corn
•    fresh tomatoes
•    fresh red, green, and yellow sweet peppers
•    fresh jalapeno peppers
•    fresh squash and zucchini
•    garlic powder
•    paprika
•    fresh natural black pepper, white pepper, dried chili spice, and India long pepper spice
•    an assortment of gourmet Tortuga sauces, such as Sweet Heat Carib, Mango & Ginger Stir Fry, Hot Caribbean Pepper, and Hell Fire Hot Pepper Sauce.
•    jars of Tortuga Gourmet Wildflower and Citrus Honey

Give each team a couple of hours to finish the cook-off, then conduct the taste contest and let your guests vote on the best. If you get a wow! Winner, consider having the team try it again for charity, presuming they have kept track of their ingredients and can repeat the taste (check out those opportunities at http://www.chilicookoff.com).

1) Recipe for Drunken Cranberry sauce(Thanksgiving w/ a twist):

Ingredients:

1. 1 large unpeeled orange, seeds removed, cut into quarters
2. 4 cups fresh whole cranberries
3. 2 tbs TORTUGA HELL FIRE HOT SAUCE
4. 1-2/3 cups sugar
5. 1/4 cup of dark rum

Preparation Steps:

1. Combine half the cranberries & half the oranges in a food processor bowl and grind into coarse paste.
2. Pour into a large bowl and repeat.
3. Combine the fruit mixture with the pepper sauce, sugar and rum and stir well.
4. Cover and refrigerate for 24hrs. or longer.

2) Try Jerk Burgers on the BBQ this weekend!. recipe:

Jerk is a hot, spicy, uniquely West Indian seasoning which has been developed over the centuries. Used for grilling, barbecuing, marinating or blending small amounts into sauces, soups or stews to give your meals a Caribbean kick

Ingredients:

1. For sensitive palates, use only 1-1/2 teaspoons of JERK marinade
2. 1-1/2 lbs of ground chuck or round
3. 2 tablespoons of soy sauce
4. 2 tablespoons of your favorite rum
5. 1/4 cup finely diced red onion
6. 2 tablespoons ground black pepper
7. 1 tbs salt.

Preparation Steps:

1. Combine all the ingredients in a bowl, and blend with a fork.
2. Divide meat and shape into patties.
3. Chill 6 hours or longer. Then light up the BBQ and grill until they reach desired degree of doneness.
