Latoola’s annual Thanksgiving dinner must include apple, pumpkin, and pecan pies. Her husband insists on it even though she protests that only the apple pie typically gets eaten, and she tosses the bulk of the pumpkin and pecan pies into the trash after giving him a week to refuse any more desserts.

This year, Latoola got inspired …

a week after Thanksgiving in her quest to avoid wasteful tossing of food into the trash bound for a landfill instead of for someone’s palate. So, she created caakies–a combination of an individual cake and a cookie–made from the leftover pies.

Beware: this is not an exact recipe. It’s a cooking style that relies on sound instincts on the cook’s part. Here’s what Latoola did, but says you can modify at will and still get good results:

Since her pumpkin pie was made from canned pumpkin pretty much following the recipe on the label but substituting sweetened condensed milk instead of canned evaporated milk and baked in a graham cracker crust, she just dumped the three-fourths of the pie she had left into a mixing bowl and started stirring.

Then, she scraped the remaining two-thirds of the store-bought pecan pie from its too-thick crust and mixed that real good. Next step was to mix about a half cup of all-purpose flour with about a half cup of light brown sugar, then blend that into the pie mixture, after which she added about a quarter cup of honey, three-quarters cup of chocolate chips, about a half cup of coconut, and about a cup full of mixed dried fruit that included raisins, pineapples, cherries, and cranberries.

She dropped the mixture in “dollops” on a buttered clay baking dish and baked for about 12 minutes at 350 degrees, watching carefully for the edges and tops of the randomly shaped caakies to turn light brown.

She cooled them slightly on a wire rack and test-tasted to her delight. She reports the warm caakies were superb, but she was even more delighted when her husband arrived home and devoured three of them in their cooled version.

A hit!

Latoola says the same creative cooking technique could be applied to a leftover sweet potato pie with any variety of interesting ingredients including oatmeal, granola, and your favorite varieties of nuts (got some leftover from a holiday party you aren’t sure what to do with?).  Or, spice it up a bit with fresh natural nutmeg seed.

As they come out of the oven, personalize them even more using that excess holiday candy. Press a chocolate kiss, a bite-size peanut butter cup, or a piece of candy corn into them. For simplicity, you might even just sprinkle on a little white powdered sugar. If you are feeling super creative, mix up a batch of frosting (or cheat by using the store-bought kind) and slap two caakies together.

Latoola says she’s likely going to make pumpkin and pecan pies for Christmas and might even hide them after a couple of slices have been removed so she can make caakies for New Year’s with very little planning, shopping, and effort.

Bet you could serve it with ice cream, but be sure you also offer your guests a fresh brewed cup of Thai coffee or tea or Tortuga gourmet coffee.

Answers included traveling to be with family, staying in town to attend an annual gathering of friends who live away from their families, and one ambitious one who announced she and her family would be meeting at their mountain cabin where she would cook the traditional Thanksgiving meal – all from scratch, including her apple and pumpkin pies.

The group quickly pronounced that ambitious one as insane even though she defended her fresh approach using organic and natural products, like honey in her pies and candied yams, as one of the greatest days of her year.

Finally, time came for the one who originally asked the question to answer the question. I’ve dubbed her the grandmother because she said her two children, their spouses, and five grandchildren were coming for Thanksgiving Day and she was planning to spend as much with them as possible.

Another lady asked the grandmother how she could spend any time with them while preparing a meal for that many people, and the answer really caught my ears, “You wanna hear a little secret?”

All heads nodded, so she continued, “I buy a really good brand of frozen apple pie, then let thaw for about a half-hour. Then I carefully slip it into my own pie dish, brush it with milk and sprinkle on a little sugar to give it that nice glazed top, then I bake as directed. Voila! In no time I have a pie people always rave about with very little effort.”

“Wow, that would also work with pumpkin pie,” one of the ladies planning to attend the friend get-together piped in. “That’s what I’ve been asked to bring this year and I was going to buy the pie at the bakery, but I think I’ll try ‘baking my own.’”

They all laughed heartily, then the conversation continued with a suggestion that you could buy an entire turkey dinner at the supermarket and serve it beautifully on china platters and bowls and never have to admit to not having done all the work.

They discussed the virtues of instant mashed potatoes and how adding a few spices and some extra butter enhances the flavor. They mentioned gravy mixes for a lump free topping on those potatoes. Brown and serve rolls from the supermarket, and frozen vs canned string beans for a casserole.

The general theme of this group was to minimize how much time they spent in the kitchen and maximize how much time they spent with family and friends.

I traveled the 6 hours to visit my mother, arriving on Friday evening as she’s always liked so I could be there for “supper.” We are southerners, so that evening meal is not dinner at her house. Because my mother hadn’t been feeling well, I’d offered for my husband and me to stop and bring home dinner, but she wouldn’t hear to it.

When I arrived I found those two sisters cooking. My aunt didn’t think my mother was up to the task, so she came to help, bringing food she’d prepared at her house and pitching in to cook the rest. I believe she had just finished undergoing chemo—she was very modest about what was happening to her so she kept the details private as much as possible.

Knowing that they were both being challenged on the health front, but that they cared so much for us that they expended what little energy they had to cook supper for my birthday was an awesome outpouring of love.

That’s the kind of love I equate to the women in my family. Those I remember who have passed from this life and those who are still with us. I haven’t been at many family functions, due to the distance I live away from the home places, but when I hear about one of them, food is abundant. Love is poured out like autumn leaves flowing gently in the breeze away from their tree but never forgetting their origins.

I am truly blessed to have been born to this kind of love, to this kind of family. To have so many childhood memories of get-togethers where an abundance of home-cooked food was consumed after a blessing was said asking that it nourish our bodies and our souls.

I know my own children and grandchildren have been deprived of much contact with our deep roots, but I hope I have been able to pass along some of what it means to be connected. To stay connected. To put your last ounce of strength and energy into an expression of love for family.

My mother and my aunt symbolize a long line of strong, independent, faithful women who exhibit an amazing grace. They have inspired something in me that I feel every day, and I hope I can pass along at least once in my lifetime a gift so precious as that meal the two of them got together and cooked for my 60th birthday. I shall remember it always as one of life’s most precious moments.

October became Breast Cancer Awareness Month in 1985 as an annual international health campaign to increase awareness of the disease and to raise funds for research into its cause, prevention, and cure. The pink ribbon came to symbolize the fight in the late ‘80s.

One thing I’ve learned is that buying pink products really puts very little cash into breast cancer research; at best many of those things just make us “feel better.” I have a couple ideas that have the potential for a greater direct impact:

If you know a breast cancer victim or survivor, take her to breakfast, lunch, or dinner (or supper). That’s what I plan to do with my friend who has survived for 25 years. Or, take a pink bouquet to the hospital and place it in the surgical ward thanking the doctors, nurses, and technicians who care for patients with breast cancer (you could even consider giving a silk orchid from I-ShopTheWorld.com for something that will last). And, by all means be self-aware and diligent about your own health and fitness. An estimated 182,460 new cases of invasive breast cancer are expected to occur among women in the United States during 2008. An estimated 40,480 women will die from breast cancer. Breast cancer is the second deadliest cancer in women (behind lung cancer).

Be aware, too, that although breast cancer in men is a rare disease, it can occur and it is often fatal. Less than 1% of all breast cancers occur in men. In 2005, when 211,400 women were diagnosed with breast cancer in the United States, 1,690 men were diagnosed with the disease. Make sure the men in your life are aware that it can happen to them.

A friend recently told me about a friend of hers who sent her an instant message that said, “the ghost is back.” Not having been aware that her friend had ever had a ghost, my friend inquired further and learned that about six months ago things had started appearing in different places in her home than where she’d left them. Finally out of exasperation she’d asked the ghost to leave after about a month and it did so.

Now, it’s back …
And the host surmises that the uninvited guest is a female apparition cause she’s a tidy freak. Dishes left on the kitchen counter one night were in the sink the next morning. Disheveled stacks of paper are straightened. Things are just generally tidied up. It usually happens overnight which led her to accept that she was sleep walking, but on this visit, she has found things changed when she arrives home from work. She also occasionally sees movement out of the corner of her eye but nothing’s there when she focuses on the area.

When asked what she plans to do, my friend’s friend said “I’ll put up with it for a month or so, then I’ll ask it to leave again. It was cooperative last time.”

Last time, she also checked to see if anyone had died in her house or on the site of her home but can find no record of such a demise that might account for the occasional ghostly visit.

The visits also don’t coincide with any particular time of year or season, so it’s not just the approach of Halloween that has inspired the latest encounter.

This friend of a friend is not alone, either. A 2005 Gallop poll reported that three out of four Americans believe in some kind of paranormal occurrence. Those beliefs include ghosts, witches, and haunted houses. The things of Halloween.

According to a cbsnews.com report October 18, this year, one in five Americans told CBS News pollsters they have seen a real-life ghost in some form. And, according to the article, whether or not they’ve seen one, even more Americans believe that ghosts actually do exist.

The article goes on to say, “Nearly half of Americans say they believe in ghosts, or that the dead can return in certain places and situations.

“Women are more likely to say they believe in ghosts than are men: 56 percent of women believe, while 38 percent of men do. More than half of younger Americans aged 18 to 45 believe in ghosts; those over 45 are less likely.

”More than one in five Americans says they have seen a ghost themselves, or have felt themselves to be in the presence of one.”

So, our friend’s friend is not alone. And as evidenced by part of the history of Halloween, this upcoming day for costumes, candy, and coming together for parties, had at least part of its origins as All Hallows Evening in that realm between the living and the dead. The ancient Gaels believed that on October 31, the boundary between the living and the dead dissolved, and the dead became dangerous by causing problems such as sickness or damaged crops.

We suspect most of the ghosts, goblins, and witches, our shoppers are going to see this Halloween will be of the costumed variety ringing door bells and yelling “Trick or Treat” or just coming to join you at a party.
